So putting painters tape down would just mean that you have to re-create the mesh for levelness, not adjust the z-offset. I'm also getting a BL Touch this week, my understand is that the z-offset is the height difference between the tip of the bltouch and the depth of the nozzle from the hot end. The adhesion was way strong than PLA, rarely do I need to use any tools to get PLA up, I did with the PETG. I haven't gotten it totally dialed in yet, I had success when using a raft which was needed anyways for what I was printing.

I can report the painters tape does work really well, just need to really slow down the speed that the nozzle moves at. I just got some PETG too and was also worried about putting it directly on the glass bed because I've read the horror stories of it fusing to the surface. My largest PETG print was a parts bin that covered nearly the entire X-Y build area, and it slide right off the surface once cooled. I print 95% of my stuff with PETG, and it was scary to try to print directly on the build plate the first time, but I don't think I'd use any other surface now. As the build plate cools off, you'll actually hear popping sounds like ice cracking, which is the part and build surface letting go of each other. If it gets all the way to room temp and doesn't separate, 10min in the freezer will fix that (build plate and part). Once the print is done, let the bed cool below 40C, and the print will pop off. I would not suggest letting the bed temp cool to offset chances of warping. 80-85C for bed temp, too cold will cause first layer adhesion problems. Make sure the bed is cleaned with isopropyl alcohol and paper towels until no yellow color is seen to get the first layer adhesion. With the V2 glass bed, on the textured side, no issue with PETG directly on it, no tape required.
